Cowboys 2021 Signing Day: Cowboy Backs
STILLWATER – The December Signing Period for Oklahoma State is finally upon us and the Cowboys are bringing in some talented athletes. Pokes Report is detailing every signee with in-depth profiles and analysis, as well as premium content on the class. We’ll also have head coach Mike Gundy’s thoughts on the signees and exclusive interviews as well.

Austin Jarrard, TE, 6-4, 245, American River C.C., Calf./El Dorado Hills (Oak Ridge), Calf.
This is a real find in recruiting in a pandemic year with no junior college football being played in California. Jarrard, a hardworking kid that held down two jobs and played football at American River College in Sacramento, Calf. Will help. He is a polished blocker with more strength than expected out of his frame. He often takes defenders off their feet. As a route runner he isn’t blazing with speed, but he understands subtlety and how it helps create space. He is polished for his experience. That shows in the raw numbers as a freshman at ARC he was first-team All-Conference with 26 receptions for 310-yards and three touchdowns. In high school his senior season he had wide receiver envious numbers with 52 catches for 1,077-yards and 14 touchdowns. He averaged 20.7-yards a reception. On defense he had 62 total tackles, a tackle for loss, 10 sacks, an interception, three fumbles forced and a blocked kick. Hard worker is the way his high school and junior college coaches describe him. Oklahoma State won over East Carolina, Liberty, Texas Tech, Alabama-Birmingham, Central Florida, and Western Kentucky.
